It is so quiet can hear the ticking of my new watch as I sit at my desk- thinking of a fast, healthy dinner...and I am thinking chicken salad....to be continued.

Sunday morning at the Ebey's

At least one of the weekend mornings we try to sit down together for breakfast...usually its Sunday.  And this week was Waffles, Smithfield bacon, and eggs! 

 ( this is Bobby's plate...I changed the settings on the camera on my phone and it turned out pretty cool I think)




but this is why we had Waffles:

Pecan Honey Butter!! 


YUM!  Bobby and I used this instead of syrup this morning!!!  It was great!!!


Easy Waffles



Preheat waffle iron according to the directions

1 3/4  cup flour
2 TBSP splenda (or sugar)
1 TBSP baking soda
1/4 tsp salt
2 eggs
1 34/ cup milk
1/2 cup melted butter
1 1/2 tsp vanilla
non stick spray for waffle iron

Mix well, pour batter onto grids of your preheated iron that has been lightly sprayed with non stick spray and bake according to directions.  Serve Warm.  Makes 5 belgian size waffles.


Blackburn's syrup and Jelly

Made in Jefferson, Texas and is some of the best stuff on earth!  Not to mention buying it directly from their store was half of what you pay in your local super markets.  I got the syrup for $1.59 each and Jelly for $1.59 each...

So this is my awesome buy for less than $10.00 from Blackburn's Factory Outlet

(except for the jar in the middle with the yellow label...I will tell you more about that later!)

It was all about the food...

April 15th and 16th I had the privilege of going to Jefferson, Texas with my friend Allison and her ladies from Church for a Girls Getway...so we could get away from work, husbands, kids, cooking, cleaning...I think you get the idea.  Yes Moms despite what non Moms think...NEED A BREAK TOO!  With other adults!!! 
Jefferson, Texas is only about 40 mins from Shreveport-Bossier in East Texas but it is a great escape!  I have been there many times on day trips with friends riding on the motorcycle with my husband, but only went over for Pie and coffee usually...I had never had the chance to walk around and explore the shops.  It was fabulous!!  I had a great time...and the first place Allison and I ate was Kitt's Kornbread were we had "The Redneck" which is Fried Bologna and Cheese on JalapeƱo Cornbread with tomato, onion, and mayo!  I had heard these were AWESOME...but that doesn't even begin to describe the happiness that was happening in my mouth.



and the Pie...was even better!  Allison and I shared the sandwich so we could both get our own slice of pie...
It was very hard to choose because well...look they all look amazing!


So we got Double Chocolate with Cherry topping and whipped cream & Buttermilk


and we split them too so we could both have a little of each!! 

YAY for Pie!

Smothered Chicken & Rice

4 chicken breast
1 can cream of chicken soup
2 cups shredded cheese
2 cups cooked rice

Place chicken and soup in the crock pot for 7-8 hours,
Add cooked rice and cheese.

I liked this simple dish, but Bobby and the boys weren't thrilled.

Dinner on the Grounds



This is my most favorite cook book in the world. It was given to me by my mom and Granny. It is a collection of recipes from different Church of Christ churches from across Texas, Oklahoma, Arkansas, & Louisiana. I usually adapt a couple of recipes to come up with my own...my Granny, her oldest sister Aunt Nora, and her youngest sister Aunt Dean all have recipes in it.

I will be posting a few off my favorites that I feel are truly worth passing along!

Picnic on the Lawn

The Shreveport Bossier tourism is hosting 2 months of event called Rendezvous on the Red and each Friday in April they hosting different local bands to play during the hours of  11:30am-1pm right on the courthouse lawn, you can enjoy your lunch while enjoying some of the areas great local musicians. Last week my friends and I went down and bought food from the vendors.  This week we decided to brown bag it. Lauri brought chichen salad sandwiches, cookies, a bag of chips we had left from a group lunch last week, and fruit.  We all had our own drinks...Allison brought a blanket and we had a nice Picinic!!

7 up Cake

Yummy 7 UP Cake




You need:
1 pkg white cake mix
1 cup 7 Up

mix the 7 up with the mix and bake according to direction on package. Completely cool cake

After cake is cooled,in a separate bowl mix 1 container fat free cool whip, 1 box sugar free vanilla instant pudding, 1 small can of crushed pineapples, refrigerate for 15 mins...then spread on cake.

Add fresh cut strawberries if you like and enjoy! Refrigerate any remaining cake.  These yummy Strawberries were courtesy of one of my besties Susan!  We added them to our own pieces of cake! Thanks Susan
