Homemade Salsa


Homemade Salsa

1- 14 oz can diced tomatoes
1- 10 oz can Rotel with cilantro
1/2 small onion, roughly chopped
1 clove garlic, peeled and smashed (I used the minced in the jar)
1/2 jalapeno, seeded or not (depends on how spicy you like it)
1 teaspoon honey or sugar
1/2 teaspoon salt
1/4 teaspoon ground cumin 
juice of 1 lime

Directions:  Put all the ingredients in the base of a food processor or blender (I used my magic bullet) and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and adjust to taste. Serve with chips!!

Fresh Takes by Kraft!!




Kraft Foods have made my life just a little easier here recently...I have tried several of their Fresh Take packages on pork chops and chicken!  It has made this life style change on eating healthier less boring...and more tasty!!  I am in no way being paid or being given this item to say nice things about this product...I just really really like and thought I would share my new love =]!!!

Birthday Oreo Stuffed Brownies

Happy 100th birthday Oreo!!!







For a co-worker's birthday I made these yummy brownies!! 






I made the brownies according to the box...place the cookies on the bottom of the 11 x 13 baking pan and poured the brownie mix on top...........baked according to the package and they turned out wonderful!!

Strawberry 7up Cake




12 oz. Diet 7up
fresh sliced strawberries
Strawberry cake mix
Sugar Free Cool Whip

mix the 7up and cake mix together, bake according to the package on the box, let cool.  Top with cool whip and Strawberries!  Enjoy!!!

Honeybutter Pork Tenderloin

  • Honeybutter Pork Tenderloin



  • tablespoons butter
  • tablespoons honey
  • 1 ½ lbs pork tenderloins , trimmed of silver skin
  • salt
  • pepper
  • ¼ cup water

Directions:

  1. 1
    Preheat oven to 375.
  2. 2
    In a dutch oven or ovenproof skillet, heat the butter and honey over medium heat, stirring to melt butter.
  3. 3
    Season the pork with 1/2 tsp salt and 1/2 tsp pepper and place in pan.
  4. 4
    Cook until underside is lightly browned, about 5 minutes.
  5. 5
    Turn pork, and cook until other side is browned, about 5 min more.
  6. 6
    (Lower the heat if the honey begins to burn.) Put the pan in the oven, and roast until the pork is just cooked through, 7 to 10 minutes.

    Transfer the pork to a plate and cover with foil to rest.
  8. 8
    Add the water to the pan, and stir over medium heat to scrape up all the browned bits.
  9. 9
    Add any accumulated pork juices from the plate, and simmer until sauce is reduced to about 1/2 cup.

    Slice the pork on the diagonal and served drizzled with the sauce.

This was another recipe I found on Pinterest (http://pinterest.com/alwaysapayne/)...made it on Friday and it was delish!!  I will be making it again!

back to blogging...

It has been almost 2 months since I have blogged anything.  Sorry about that - I have started a new position at work and have been working on my weight & fitness for the last month.

I started Weight Watchers Points Plus (well my version) on February 1, 2012...and I am minus 7 lbs so far.  I will be looking, creating, and sharing new healthier recipes that I come across and/or create.  Pinterest has really had me hungry lately...but I have mostly been on the fruit and veggie train for the last 3 wks.
I did break loose and the last 2 weekends I ate not so healthy foods at the Mardi Gras celebrations in the Shreveport area...but I didnt gain any more weight!!  Which is always a good thing.

Today I put a recipe I found on Pinterest - originally from Living, Laughing, Loving

ingredients
Uh, yeah.  You heard right.  Only THREE ingredients.  I wasn’t joking.
  • Pork Chops
  • Ranch Seasoning Dry Mix Packet
  • 1 can Cream of Chicken plus 1 can water as needed {or 2 cans cream of chicken}  This will depend on how fast your crockpot cooks and how long you’ll be cooking it.

Ready for the hard part?  {I’m so funny.  I know.} Combine all three ingredients in the crockpot and mix well.   Yup.  That’s it.


I left mine in the crock pot this morning before leaving the house...I am so excited to try it tonight!!
