Dec. 2nd - The second day of Christmas cookies

Santa's Easy Whoopie Pies

Ingredients
  • 1 package 2-layer-size  yellow cake mix
  • 1/3 cup  butter, melted
  • 2   eggs
  • 1/4 cup  water
  • 3 tablespoons  red, green, and white edible confetti sprinkles
  • 1/2 16-ounce can  vanilla frosting (3/4 cup)
  • 1 3-ounce package  cream cheese, softened
Directions
1. Preheat oven to 350 degrees F. Line two large cookie sheets with parchment paper; set aside. In a large bowl, stir together cake mix, melted butter, eggs, and the water with a wooden spoon until smooth and thick.
2. For each cookie, drop dough from rounded measuring tablespoons 2 inches apart onto prepared cookie sheets. Sprinkle dough mounds with confetti sprinkles. Bake in the preheated oven for 10 to 12 minutes or until cookies are lightly browned and edges are set. Transfer cookies to a wire rack; let cool.
3. In a medium mixing bowl, stir together the frosting and cream cheese until thoroughly combined.
4. Spread a rounded tablespoon of frosting mixture on the bottom half of each of the cookies, spreading to the edges. Top with the remaining cookies, flat sides down, pressing cookies together lightly.
Makes about 12 sandwich cookies.

Dec. 1st - Thumbprint Cookies

 

 

 

Thumbprint Cookies Recipe

Ingredients
  • 1 cup of butter (2 sticks), room temperature
  • 1/2 cup of sugar
  • 2 eggs, room temperature
  • 1 teaspoon of vanilla extract
  • Pinch of salt
  • 2 cups of flour
  • 1 cup of chopped nuts (optional)
  • 3/4 cup of your favorite jam (I use apricot or blackberry usually)

Method

1 Cream the butter and sugar on high speed for about 3 minutes.
2 Separate the eggs. Add the yolks and vanilla extract to the butter mixture. If using nuts place the egg whites in a shallow dish on the side and whisk them until bubbly and frothy (the egg whites will be used to keep the nuts on the cookies).
3 Add the flour and salt. Mix until just combined. Place the dough in the fridge for 30 minutes and preheat the oven to 350F.
4 Roll the dough into balls about 1 inch in diameter. If using nuts, dip the balls into the egg whites then roll them into the nuts until covered. Place the balls on cookie sheets.
5 Press down with your thumb to make a small well in the center of the cookie. Do not press too hard or the cookie will fall apart. Fill with 1/2 teaspoon of jam.
6 Bake for 12-15 minutes or until slightly firm. Allow to cool for a few minutes on the cookie sheet to firm up before moving them to a wire rack to finish cooling.
Makes 2 dozen cookies.

12 Days of Christmas Cookies

Starting Dec. 1 I will be posting some of my favorite Christmas Cookie recipes!!!  It says 12 days but there might be more depends on how crazy it gets!  My oldest Son Matt is coming home from Ft. Bragg, NC on Dec 15 for 2 wks...we are very excited.  Lots of cooking & eating will be done!!

Jack Daniel's Cake

I was invited to a Bunco night with the girls by my friend Kristen from work last night...I have never played, but she said there would be lots of great people and yummy food.  So I went.  And I am glad I did!!  They had Thanksgiving food!  I took my pumpking muffins (see that post for the recipe) and she brought her Mom's Sweet Potato Casserole - which I hope to share later!!  The outstanding dish was from another fill in lady name Wyrene.  It was a cake made with Jack Daniels...yep and it was good.  I found the recipe at Food.com and had to share!!!



  • 1 (18 1/4 ounce) package yellow cake mix
  • 1 (3 1/2 ounce) package vanilla instant pudding mix
  • 5 eggs, slightly beaten
  • 1/2 cup milk
  • 1/2 cup Jack Daniels Whiskey
  • 3/4 cup margarine, softened
  • 1 (6 ounce) package butterscotch chips
  • 1 cup chopped walnuts

Directions:

  1. Mix cake and pudding mix together.
  2. Add eggs, milk, whiskey and magarine.
  3. Beat long and hard BY HAND.
  4. Add butterscoth mosels and nuts, reserving 1/2 cup of each.
  5. Pour batter into greased 13 x 9 x 2 inch pan.
  6. Sprinkle remaining morsels and nuts over batter.
  7. Bake @ 350 degrees 45-60 minutes.

and PS...I won $25 (1/2) the big money for the most Buncos...beginners luck is all!  But it was a great time!!

Snicker Salad

Friday at work we had our annual Thanksgiving Potluck dinner for the office.  We have so many talented bakers and chefs...I dont know where to begin.  so I decided to start with one of my favorites of the day...this was brought by my co-worker James who had his sister in law make it.  It was so good.  I plan on making it for Thanksgiving at my Brothers this week. 


Snickers Salad
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (12 ounce) container Cool Whip, thawed
  • 6 Snickers candy bars
  • 4 -6 granny smith apples Directions:
  1. Mix cream cheese and powdered sugar until thoroughly blended.
  2. Fold in Cool Whip.
  3. Cut Snickers into bite size chunks and add to cream cheese mixture.
  4. Chop the apples into chunks and stir.
  5. Chill 1 hour before serving.
  6. Chilling for a long period of time (such as overnight) will result in liquid being released from the salad.

pumpkin muffins



One of the easiest recipes...

1 15 oz. Can of pumpkin (not pie, regular)
1 box of yellow cake mix

Mix, fill muffin cups, bake at 350 fir 20 mind. Eat!!! Enjoy!!!!

Homemade Pizza Night!!!!

Homemade Pizza Night!!!!




Ingredients:

Mama Mary's Thin and Crispy Pizza Crust (there are 2 crust)
Great Value Mozzarella & Taco Blend Cheeses
Great Value Pizza Sauce
Frozen Onion and peppers (not pictured)
2 lbs cooked hamburger cooked with McCormicks Hamburger Seasoning (rinsed and drained)
Hormel Bacon bits
Olive Oil (just enough to brush the pizza crust

For each pizza - brush the Olive Oil on the pizza crust, add sauce, meat, peppers & onions, and top with cheese.  Cook in for 12 mins at 425 degrees.
